Derryck's involvement in the specialty food trade began in 1980 as Jamaica's Chief Trade Commissioner when he identified this market segment for Caribbean processed food exporters. In 1985, seeing an opportunity for a popular Jamaican product, he challenged companies to develop the product for the export market. And, "Jamaican Jerk" seasoning and marinade was launched at that year's Summer Fancy Food Show. The rest is history.
