We supply our customers with new crop pecans. We do not make our products with pecans from last years crop or from 2 years ago, as many do. We only use new crop. We developed a method of making a honey butter spread using pecan meal, which are the flakes from chopping pecans, it is similar in appearance to buckwheat flour. It was fairly useless for many years so now we use all of the pecan. We develop new flavors to differentiate our selves from others, by adding for example, jalapeños, beer, bacon, etc. to our pecan brittle line.
