Renewal Mill, an upcycled food company, will launch a gluten-free Upcycled Vanilla Cake & Cupcake Mix. The company partnered with precision fermentation company Perfect Day to incorporate its Protein Pre-Blend Bakery Egg Replacer, an animal-free whey protein product that mimics the behavior of eggs in baking.
The product is Renewal Mill’s first cake mix and marks an expansion of the company’s baking mix product line. The animal-free cake mix features upcycled okara flour from Renewal Mill, and was developed by five-time James Beard Award-winning baker and cookbook author Alice Medrich.
Perfect Day’s egg replacer provides a structure that’s hard to replicate in traditional egg-free vegan baked goods, according to Medrich who said in a statement, “Perfect Day Egg Replacer is a game changer. I didn’t think it possible to reproduce the texture of a classic American-style cake without using actual eggs.”
Perfect Day whey protein is made using a precision fermentation process wherein microorganisms are leveraged to turn ingredients into sustainable products. The process emits up to 97 percent fewer greenhouse gases, uses up to 99 percent less water, and employs up to 60 percent less nonrenewable energy to make a dairy protein that is nature-identical to the protein found in cow’s milk.

The product will initially retail on Renewal Mill’s website for $7.99 with planned expansion into in-store retail beginning in 2024.
