FIC Cohort Winter 2024:

The Barreled Bee Founder Lee Hedgmon, a native Oregonian who loves creating amazing, layered flavors with simple ingredients. Lee founded The Barreled Bee in 2017 with the desire to answer the question, “What would happen if you mixed different honey varieties with different spirits barrel?” The answer is, “something amazing and unique.” The Barreled Bee brings all the goodness of barrel-aging to honey. Those unique barrel characteristics come through in the honey as a distinctive flavor component when used to create sauces, jams, and confections. The honey is sourced from Oregon apiaries, used barrels from local distilleries and wineries, and the fruits, vegetables, even the coffee are from local producers.  DEI Entrepreneur; Lee Hedgmon          https://www.thebarreledbee.com

Sh-Mallow, the idea of Sh’mallow came on a 4th of July celebration in Portland, several years ago. I wanted to find some hot cocoa topped with marshmallows. Who doesn’t love marshmallows on their hot cocoa? The stand I came across only had whipped cream to top my favorite drink, so I walked away disappointed. Just as the fireworks show started, a firework went off in my head as well: I need to create a MARSHMALLOW that can spray out, just as easily as whipped cream! A SPRAYABLE, FRESH marshmallow that can be TOASTED! Sh’mallow was born that day, and we’ve been working tirelessly to reach this delicious dream ever since.  We had the dream. We made it happen. We can’t wait to share it with you!

Mirth Soup is proud to present three restaurant quality, jarred soups to the 2024 Winter Fancy Food Show, under the expert guidance of the Food Innovation Center. These soups are affectionately known as The Mirth Triplets: Pumpkin Citrus, Tomato Tarragon, and Carrot Garlic Lime are made by putting our highest confidence in the highest culinary principles and ingredients. The results are unique, innovative flavors, remarkable taste with nuanced mouthfeel, along with vibrant colors for presentation. All three pureed soups originate from a strong vegetable base, yet people are often lulled into thinking they are indulging in something cream-based. They offer versatility and wholesomeness. The labels for Mirth Soup are created with just as much passion as the soup behind them. They act as a calling card of sorts and offer great eye-appeal and significant value-added imagination. The look is chic, whimsical, colorful and nostalgic. These jars certainly stand apart in the soup aisle. Each label depicts a happy clamoring of hands and spoons vying for a delicious taste. There’s a hubbub on those labels! And when sitting on the shelf, all three together, they create an enticing block of beautiful color. Mirth Soup is not ordinary! We want to charm your senses. These soups are original recipes created and served in Chef Loren Lee’s very own tiny, ten-table restaurant she once created in her hometown of Waco, Texas. She learned that tastes can transform you, enough that comfort, anticipation and laughter will come to rest at your table. Mirth Soup was a Top 25 Finalist in the HEB Quest for Texas Best Contest in 2018. And little babies are often big fans, too! A seasonal soup, White Christmas Soup, is in the works.
