Dairy and Plant-Based Options in Mix

NEW YORK  -- What’s on the condiment shelf in your fridge?   Probably some hot sauce, ketchup, mayo, mustard, bbq sauce, some tamari?

M.A.D. Foods wants to turn your fridge into an adventure outfitter.  Every hot food event – meal, snack, or night-time noshing - can become a celebration of gutsy flavor, luscious mouthfeel, and easy prep.

For vegans and flexitarians, we’ve crafted two creamy plant-based options – Black Truffle Butter and Roasted Garlic Butter – to add zing to piping-hot veggies, grains, wild mushrooms, mac ‘n cheese and more.

Four 82% butterfat butters bring comfort food panache to your kitchen.  Drop a dollop of Black Truffle Butter on a meat or mushroom steak. Smother cornbread with Fire-Roasted Jalapeño Butter.  Use Roasted Garlic Butter to upgrade soups, shrimp, and veggies.  Parmesan Herb Butter rocks as a one-ingredient pasta sauce.“High fat, Euro-style butters carry flavor like nobody’s business,” says company founder Thierry Farges, who has been crafting specialty butters for over a decade. We saw a hole in the dairy shelf, where vegans and flexitarians go for plant-based butters.”  The result is a GMO-free base that contains organic oils and Rainforest Certified ingredients, “infused with the same melty-creamy flavors as our dairy butters.”

Introduced in September 2020, the butters are now available at specialty food stores and grocers and the New York City metropolitan area and in Independent grocers in the Midwest. They are also available through Amazon Prime.  The suggested retail price is $4.99 for 3 ounces.   

Additional flavors in both categories are in the works.

M.A.D. Foods is a niche producer of curated, small batch specialty foods.  We focus on regional raw materials and process them close to the source.  Our heritage French recipes are adapted to please the adventurous American palate.  Our brands include award-winning Aux Délices des Bois, and our new game-changer launched in fall 2020, Butter Craft Provisions.

Tiny Bio

When Thierry Farges arrived in New York from France, he looked for familiar foods. The ‘80s didn’t offer much in the way of the truffles and ducks of his native Dordgogne….so he introduced them through Aux Délices des Bois.  Farges’ romps through forests produced a decades-long business in wild mushrooms and fresh truffles. He sourced ducks locally to produce creamy, pure fat.   

Today, M.A.D. Foods (for Marché aux Délices) is, plainly put, in the fat business.  Our high-fat butters are produced in Pennsylvania Amish country.  Our legacy brand, Aux Délices des Bois, and our new value brand, Butter Craft Provisions, are crafted with identical, high-standard ingredients.  We also produce shelf stable Animal Fats under private label for local and national retailers.
