PRINGY, Switzerland (Jan. 16, 2025) — The world's best cheese, Le Gruyère AOP, mixes its bright flavor with the bright lights of Las Vegas at the 2025 Winter Fancy Food Show.
Despite nearing a century in existence, the semi-hard, raw cows' milk cheese continues to dominate the culinary world.
Located at booth 612 in the West Hall/Deli section, representatives from the global powerhouse will provide samples and show attendees how to best appreciate the cheese. For example: Rubbing it between the forefinger and thumb brings out the flavor…? And it makes for a nice perfume, if one is into that sort of thing (who isn't? Move over Santal 33).
Whether melted into a warming fondue, baked into a comforting pasta dish or on its own as a nourishing snack, Le Gruyère AOP is a tried-and-true staple of any diet. It has no preservatives or additives, which makes for confident noshing, knowing that only milk, the necessary enzymes and the most important ingredient of time go into the mix.

- No preservatives, growth hormones or additives
- Taste is influenced by geography, weather, season, the cheesemaker and the refiner
- The milk used in production can be traced back to its exact origin to ensure standards
- Depending on the length of maturation, mouthfeel ranges from soft and silky to firmer and slightly crumbly, but always with calcium crystals offering a pleasant “pop” with each bite
- Cheese wheels must weigh 55-88 lbs. (slightly smaller for Alpage variations)
- Milk must be used within 18 hours of milking
- Milk must be transported no more than 12.4 miles to a dairy
