This 100% wagyu air dried eye of beef round ages for four months. Our Chef flavors it with red wine and aromatic juniper berries. It’s great as part of a charcuterie board, but even better on its own as an appetizer, thinly shaved with some Parmigiano Reggiano and arugula.
