The Morbidi family from Siena is aging this pecorino in walnut leaves, keeping with the traditions of their ancestors. The leaves protect the cheese, allowing it to age slowly. Flavors are long forgotten among other Pecorinos and pop when served with honey. They use sheep milk from their own herds.
