Our Ricotta di Bufala is made from the whey of the Mozzarella di Bufala,Caciocavallo di Bufala and Burrata di Bufala.Additionally,Buffalo milk is added into the rich,sweet whey and is slow cooked to a very high temperature.The nebulized curds that rise to the top of the kettle are delicate and soft.
