Specialty Cheeses in New Flavors, Formats at Show

Cheesemakers are providing innovative cheeses in more formats and unique flavor combinations. Following are some specialty cheeses that are being introduced at the Winter Fancy Food Show.

Cheese importer Forever Cheese launched a mini version of its Provolone Dolce in addition to Wooly Wooly soft sheep’s milk cheese with truffle, and Marga, a soft buffalo milk cheese. Additionally, it will showcase a new line of Mitica brand nut mixes.

Forever Cheese sources cheeses and specialty foods from countries including Italy, Spain, Portugal, Croatia, and Switzerland. Its latest offerings can be seen in booth 2901.

Cowgirl Creamery, a cheese brand specializing in cow milk cheese, is filling out its portfolio by adding a six-ounce format to its award-winning Wagon Wheel and Hop Along cheeses. The Wagon Wheel is a meltable, washed rind cheese aged for a minimum of 75 days. Hop Along is a 45-day-aged washed rind cheese that the brand notes pairs with hard cider and kombucha.

Cowgirl Creamery’s cheeses are available at booth 806.

Goat cheesemaker Laura Chenel launched both a rebranding strategy and a new product at the Show. The maker’s latest fresh goat cheese log is Pear, Sauvignon, and Herb. The product was developed in collaboration with the Culinary Institute of America Consulting and was inspired by the taste of Sonoma, California’s wine country.

“Our latest creation, Pear, Sauvignon, and Herb, is a moment of pure excitement for us,” said Laura Chenel’s brand manager, Durae Hardy, in a statement. “This exceptional goat cheese encapsulates the unwavering commitment of our cheesemaking team’s ability to infuse genuine craftsmanship into a delightful, innovative flavor.”

The product can be sampled at booth 700.
