Palazzo di Varignana

Palazzo di Varignana is a resort on the top of the Hills of Bologna, in the town of Varignana in Emilia-Romagna. We are committed to tradition, territory, excellence, and health in everything we do. Our food project started in 2017 and currently consists of a collection of high-quality extra virgin olive oils, wine (Sangiovese), jams, teas, honey, spreads, chocolate, fruit juices, and flavored salts. We craft high-quality products with what grows in our farms. We are debuting our brand in the United States with our award-winning high-quality EVOO collection. Our 100% Italian Extra Virgin Olive Oil We started growing olives on our estates in 2017. Currently, we cultivate 250 acres of olive groves. We grow our historical local varieties - Ghiacciola, Nostrana di Brisighella, and Correggiolo to produce our monocultivars and fine varieties from Tuscany - Maurino, Leccino, and Frantoio to produce our blends. Our blends are made with blends of monocultivars, not a mix of olives. Our harvest season goes from the beginning of October till the first week of November. Our olives are mechanically picked and pressed at very low temperatures (around 24 C) in a maximum of 12 hours after harvest in order to guarantee perfect ripening and ideal acidity to preserve their aromatic profile and healthy properties. We focus on keeping our polyphenols content between 300-600 mg. In 2018 our olive groves agricultural practices have been converted to organic. We will become organically certified in 2022 when we finish building our on-site mill. Currently, we have production exclusivity with a local miller. We are among the 500 best olive oil producers in the world elected by the FLOSOLEI Guide 2021 87/100 points. We rescued the extra virgin olive oil tradition that once existed in our territory during Roman times by cultivating our local ancient olive tree varieties. Our evoo labels tell our story by displaying mosaics of the Roman city, Claterna, found near our resort, our logo is inspired in a roman coin found in the same city, and the name of our oils also honors the name of the historical cities that surround us and that were known for producing a very nobile oil. Our estates are located in the limit north for the olive tree cultivation in Italy from a climatic standpoint. We choose to pick early, produce less quantity, follow closely each step of the production process to guarantee that the fatty acids and polyphenols are very high. We choose quality over quantity.
