Our preserves are single varietal, and that means you can taste the terroir of each batch and season. We can identify the type of pear and location of the farm by its bright and snappy flavor or more subdued earthiness. We use classic French confiture method and make all of our products by hand in French copper pots. We do not use commercial pectin and therefore rely only on the fruit, organic unrefined sugar, a squeeze of organic lemon, time and evaporation for set—we never add water, we only concentrate the fruit more deeply. The herbs we add to accessorize the fruit flavor are grown in our kitchen garden. We take pride in using as much of the whole fruit as possible.
