- La Sablesienne: The Origins Of Shortbread
The recipe for Sablé* (*shortbread), a pure butter biscuit, has been passed down from generation to generation with solid roots in the town whose name it bears, Sablé-sur-Sarthe located in the heart of the Pays de la Loire, in France.
July 1670, Vatel, head waiter of the Grand Condé, had a multitude of small, dry, round cakes served on trays. As far back as one goes to locate the origin of the Petit Sablé, one does not fail to mention a letter that Madame de Sévigné addressed to her daughter. Thanks to the Grand Vatel and the Marquise de Sablé, the notoriety of the Veritable Sablé, whose recipe is perpetuated by La Sablésienne, is still very much alive.
- A French Culinary Heritage
The pure butter shortbread biscuit from Sablé-sur-Sarthe is part of the French culinary heritage.
In 1989, the Ministry of Culture launched a research program aimed at identifying the culinary heritage of France. To coordinate this inventory, a structure was created: the National Council of Culinary Arts (CNAC). A steering committee of “national experts” was set up to list the regional specialties of French culinary heritage. Twenty-two volumes were published between 1990 and 2003 which have since constituted a unique and renowned collection of French gastronomes. Of course, our recipe for Genuine Sablé de Sablé-sur-Sarthe has been referenced by the National Council of Culinary Arts (CNAC) and has its page in this inventory. Our famous recipe for shortbread is also referenced in the Larousse Culinaire.

Two La Sablesienne products will be showcased during the Summer Fancy Food Show, this coming June 12-14 in New York at the Jacob Javits Convention Center.

Shortbread Cookies with Salted Butter Caramel
Authentic recipe of La Sablesienne famous shortbread cookies, Madeleine de Souvré, better known as the Marquise de Sablé, introduced this shortbread cookie in July 1670 to the court of the great Condé. She showed a multitude of small round biscuits to the brother of the king who was conquered by these delicious sweets. La Sablesienne best-selling shortbread cookies are made traditionally with pure fresh butter by the pastry chefs of La Sablesienne.
