The sliding-scale California-based chain, Everytable will make its NYC debut in the East Village, Chelsea, and City Hall. The restaurant features pre-packaged prepared foods in refrigerators, with an option to sit and eat or grab and go.
The company’s pricing strategy is dependent on median household income in the store locations ZIP Code, so a serving of tacos might be $5.75 in the east village, but $7.75 in Chelsea, reports The New York Times.
To keep food prices down, the NYC products will be cooked and packaged in a central kitchen. Sam Polk, co-founder and CEO of Everytable, told The New York Times, “Healthy food is more expensive than fast food, but a central kitchen drives down the cost…We are still profitable even at the lower price point in some neighborhoods.” Full Story
