The cream cheese shortage hit Junior's Cheesecake hard this week, according to cnn.com. The company had to pause cheesecake production last Friday in its Burlington, New Jersey, baking facility because it didn't have enough of the key ingredient used to make its cake, which is 85 percent cream cheese, according to owner Alan Rosen.
The business resumed production on Sunday after a search for more, but likely will have to pause production again as the problem persists.
Junior's sells to thousands of national retailers, as well as to restaurants, directly to consumers, and in its own four restaurant locations. Annually, Junior's goes through about four million pounds of cream cheese to make its signature product, Rosen said.
Its busiest months are the last three of the year, so Rosen is appealing to large corporations like Kraft Heinz, the food giant that owns Philadelphia, for more product. Full Story
