Founder and CEO of Root Elixirs, Dominique Gonzales, is a proud member of the AAPI community. She is also a cocktail and mixologist expert, as is proven by her 14+ years of industry experience. To celebrate AAPI Heritage month, Dominique put together a list of some of her favorite pairings of traditional Filipino dishes with delicious cocktails. Her company, Root Elixirs, is being featured in a variety of food and drink boxes this month, some of which include a curated box of food and beverages from AAPI-founded companies.
The first pairing is an appetizer food and drink pairing that can be served as a snack or before a meal. Lumpia, a traditional Filipino spring roll, is served either deep fried or fresh, and is usually served with a sweet chili dipping sauce. This delicious bite is surprisingly easy to make, and can also be found pre-made at many Asian supermarkets. Alongside a sweet and savory dish, we decided to pair a complementary sweet and savory beverage.

- 2 oz Calwise Spirits Blonde Rum
- 3 oz unsweet iced tea
- Garnish with dried pineapple
